Who doesn’t love an old fashion oatmeal cookie, especially during the holidays!? This gluten free oatmeal cookie recipe is one of our favorites and it is super easy with a little help from the godsend that is Cup4Cup gluten free all purpose flour. Seriously, it makes gluten free baking no sweat and everything comes out perfect every time. Cup4Cup is the only regular wheat flour “cup for cup” replacement we use for baking and cooking!
Instructions for gluten free chocolate chip oatmeal cookies:
– 1 stick (8 tablespoons) unsalted butter, softened
– 3/4 cup dark or light brown sugar
– 1/2 cup granulated sugar
– 1 1/2 cups Cup4Cup gluten free all purpose flour
– 3 cups Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
– 2 eggs
– 1 tsp. vanilla
– 1 tsp. baking soda
– 1 tsp. cinnamon
– 1/2 teaspoon salt
– 1 cup semi-sweet chocolate chips
Pre-heat oven to 350°F.
In a medium bowl combine the gluten free flour, baking soda, cinnamon and salt. In a separate larger bowl, beat butter and sugars until creamy using electric mixer set to medium speed. Add eggs and vanilla; beat well. Add the flour, baking soda, cinnamon and salt to the wet ingredients in larger; mix well. Add oats and chocolate chips; mix well.
Place spoon-sized amounts of dough on a foil or parchment paper lined baking tray using a spoon.
Bake for 10 minutes or until light golden brown.
They are soo chewy and delicious, no-one will know they are gluten free!
