In the summertime you will always find a jug of sun tea brewing in the hot summer sun on my porch. I love love love a tall icy glass of minty fresh unsweetened summertime sun tea (try saying that 5 times fast) on a lazy afternoon or while relaxing after spending the day down the shore or out on the lake.
It seems like overnight oats have taken over my Pinterest feed lately, but I’m not complaining! There’s something about the hearty texture and wholesome flavor of oats that really appeals to me. After testing out a few recipe variations I’m finally happy with my modified gluten free, dairy free and refined sugar free recipe. I’ve practically had them for breakfast everyday for the past two weeks. Once you’ve tried it, you will be hooked too!
This piece isn’t just for glutards, it’s for anyone that has ever struggled with self control when it comes to food. Pizza is and always will be one of my greatest vices which is why I ate an entire gluten free frozen pizza for dinner last night. But, instead of beating myself up I just pretend Ryan Gosling is giving me a little pep-talk. Something like “Hey girl, I love the way that pizza grease shines off your chin.”
Call me lazy but there are so many other things I would rather do then blend my own gluten free flour. Things like spending time with my family, going for a long run, reading a good book or taking a nice afternoon nap. That being said, I applaud anyone’s efforts to be a little more health conscious in how they eat and think about food. Lets be real, gluten free ingredients come at a premium and gluten free baking takes a lot of time, effort and money, especially with the whole trial and error thing. Luckily, making perfect gluten free muffins is a lot easier than you think. Considering I am probably the laziest gluten free baker there is, you know I’m telling the truth. There is no shame in my game, I want all the glory and none of the pain.
