No lie, I made this for the first time a few weeks back and it was AMAZING in all its gluten-free glory! I literally ate the entire pizza by myself…I def don’t recommend doing that but I do recommend trying this recipe out for yourself!
Aside from a food processor, parchment paper and a pizza pan, here’s what you need:
Gluten Free Cauliflower Crust Ingredients:
The first time around I made a classic margarita pizza (sauce, cheese, and fresh basil). This time I chose pepperoni (g-free of course). Not the healthiest I know, but that’s what happens when you go grocery shopping hungry : /
But you only live once so I figure there’s no sense in feeling guilty for moderately indulging, it’s a cauliflower crust for cryin’ out loud!
Cut the cauliflower florets and place into a strainer for a quick rinse. Try to knock as much moisture free as possible and then feed them through your food processor. The key is to grind the cauliflower down to a fine consistency similar to snow flakes.
Lay out a clean kitchen towel and pour the cauliflower right on the towel then twist it securely closed and squeeze every little bit of moisture you can out of it. I got about 1/3 cup of moisture out.
Pre-heat your oven to 450 degrees and transport the cauliflower into a bowl and mix-in 1/4 cup of mozzarella (the rest is for topping the pizza) and all other ingredients including the parmesan. Get your hands in there and make sure everything gets blended together. You should be able to form a ball-like shaped with the mixture.
Lay some parchment paper onto a pizza pan and spread the mixture out with your hands making an even layer as shown above. Place in heated oven for about 10-15 minutes. The crust will start to brown around the top and edges like so:
Spoon on your sauce then add your remaining cheese and any other toppings then place back into the oven until the cheese has melted, about 10 minutes.
And now you have a healthy, delicious and gluten-free pizza option that doesn’t cost a fortune like those personal pan pizzas you can find frozen at the store or pizzeria. If you are vegetarian skip the pep for plain cheese or any veg topping. Or ditch the sauce and try going gourmet with arugula, caramelized onions, peppers, sautéed zucchini, feta, and balsamic glaze.
Oh and one more thing! Be sure to wash that towel you used to ring out the cauliflower right away! It will stink up your house in a matter of a few hours…I learned that one the hard way!
